I only make gingerbread during one time of the year and that is pre-Christmas. And boy to I end up making a lot! This recipe has been a hit for many years, I hope you enjoy. Note that you can drop the level of spice for kids if you wish.

This recipe is my favourite for making really thick and fluffy pancakes. It’s adapted from the one on the back of the Dairy Farmers Buttermilk 600ml. Their recipe says use 375ml buttermilk, which I always find annoying because what do you do with the other 225ml? Anyway, my recipe uses the whole 600ml.
