This recipe is my favourite for making really thick and fluffy pancakes. It’s adapted from the one on the back of the Dairy Farmers Buttermilk 600ml. Their recipe says use 375ml buttermilk, which I always find annoying because what do you do with the other 225ml? Anyway, my recipe uses the whole 600ml.
